Microwave – Veg. Casserole

I got this Vegetable Casserole recipe from one of my colleague couple of years ago. My husband loves this side dish. This Casserole is good for office potlucks. …. disappears pretty quickly. I usually use home made - garlic flavored croutons, which gives an extra kick to it. I also use some Italian seasoning and dried parsley for extra flavor. If you like it spicy, add finely cut Jalapeños.

Ingredients:
3 eggs
½ - cup milk
1 – can sweet corn
1 – Zucchini (cut into cubes)
1 – Red bell pepper (Cut into strips)
¼ cup - chopped onion
½ cup - Broccoli flowerets
1 tbsp - Flour (Maida)
2 cups - Croutons
2 cups - Swiss Cheese (or Cheese of your choice)
Salt & pepper – to taste


Method:
1. Blend in the eggs with milk (beat slightly).
2. Microwave sweet corn, bell pepper, Zucchini and onion for 6 to 8 minutes … till done.
3. Add broccoli with cooked vegetables. Add salt, pepper and flour to the vegetables.
4. Toss the mixture around to coat the vegetable.
5. Mix in Croutons and Cheese.
6. Spread the mixture in a Microwaveable casserole dish.
7. Pour the egg and milk over the vegetables.
8. Microwave for about 15 to 20 minutes … until done.

Quick and Easy - Chaat

Ingredients:
TOSTITOS® SCOOPS or Baked! TOSTITOS® SCOOPS
Baked Potato
Canned Sweet/Green Peas
Onion - Cut into small pieces
Green Chetney
Tamarind and Date Sweet Chentey
Yogurt /Curds
Cilantro/Dhania - Chopped
MDH-Chaat Masala Powder
Red Chilli Powder
Salt
Nylon Sev


Method:
1. Bake the potatoes or Pressure cook the potatoes and remove their skin.
2. Mash the potatoes and add salt to it. Keep aside.
3. On a tray arrange Tostitos Scoops.
4. Put a spoonful of Mashed potato into each Tostitos Scoop.
5. Top each Tostitos Scoop with few Green peas and onions.
6. Next with Green and Sweet Chetney.
7. Top it with yogurt
8. Sprinkle with little Chaat Masala and Chilli powder to taste.
9. Garnish with Cilantro and Nylon Sev.
Enjoy your Chaat!


My daughters Tostitos Mini Pizza


She put in a teaspoon of Marinara sauce and topped it with Mozzarella chess.
Microwave it for 2 minutes …

Pasta with Marinara Sauce

Ingredients
Store brought uncooked pasta

4 big Tomatoes or Canned Tomatoes - diced
1 cup diced onion
1 tablespoon dried basil leaves
2 teaspoons Italian seasoning
2 tablespoons sugar
1/2 teaspoon crushed red pepper flakes or paprika powder
1 tablespoon garlic powder or 2 cloves fresh garlic – minced

Olive oil
Salt to taste

*Optional: Mushrooms, Olives, Zucchini

Method:

To cook pasta.
Boil water in a sauce pan. Add pasta. Add ½ tsp olive oil and salt. Cook the pasta until it is done and soft. Drain the water. To stops pasta from cooking and becoming all mushy, Run cold water and drain again and keep aside.

Marinara sauce1. In a saucepan, add some olive oil and sauté the onions, but do not let them brown.
2. Add Garlic powder
3. To the saucepan, add the tomatoes. Add the basil, Italian seasonings, sugar and crushed red peppers and salt. Simmer liquid and spices for about 30 minutes or until liquid is reduced by half.


*Optional: If you like vegetables in your pasta sauce. In a pan take 2 tbsp olive oil. If you like garlic taste add some garlic powder and Italian seasoning. Add cut mushrooms, olives and Zucchini. Sauté for a minute. I like to cook my vegetables with red wine. Add ¼ cup red wine, Balsamic vinegar, paprika powder and salt. Let it cook on medium heat for a 5 minute. Stir in Marinara sauce and let it cook for few minutes.

To Serve
On a warm plate, put some cooked pasta. Top it with Marinara sauce. Garnish it with grated parmesan cheese or Mozzarella cheese. Serve hot with Red wine on the side
